Pumpkin Caramel Flan – a silky smooth, creamy custard loaded with pumpkin, and pumpkin pie spice, with a layer of soft caramel on top. The best thing of this recipe is that you can always do it the night before. I say, If Mr. Pumpkin Pie married Ms. Caramel Custard, their offspring would look like this pumpkin flan.

This is my go to church/family event quick healthy salad. I’ve made this a few times already this summer. It's a quick alternative as a side dish with roasted chicken, fish, quinoa or with salsa and chips. This stuff is delicious!
It's recommended for tastier flavoring to sit overnight before serving, but I can never wait and usually just dig right in. Feel free to use with any lime dressing or plain is perfect. Annatto is very common in spanish cooking, this orange-red oil infuses rice dishes with instant golden color. The main purpose of this oil is to provide color to different dishes to make it more visually appealing. You can keep Annatto oil in a jar with a tight lid at room temperature for one week, or you can store it in the fridge and it will last about two weeks.
